25 Plates of Hampshire Food Festival

Twenty-five chefs have created dishes from some of the very best local produce to celebrate Hampshire Fare’s 25th anniversary. Fresh trout, handmade charcuterie, award-winning cheese, local meats, salads and vegetables will take centre stage in a selection of mouth-watering dishes.

There are 31 days of the Hampshire Food Festival to enjoy as many of the 25 plates as you can. Take a few moments to review your 25 plates experience with images and words and you could win two return flights to Cork with Aer Lingus from Southampton Airport. 

 The Greyhound on the Test
 Treacle cured test trout, wasabi crusted quail egg, cucumber gel and sesame emulsion.

 Chesil Rectory
 Chalk Stream trout, Secrett’s beetroot, Alresford watercress and horseradish cream.
 Chef warms the smoked trout; then we  cook, peel and purée the earthy beetroot with a touch of cabernet sauvignon red  wine vinegar; we assemble with peppery watercress and a generous spoonful of soft, creamy horseradish crème fraiche.

The White Horse Hotel

 Korean-style Hampshire pulled pork doughnut, spring onion salad, kimchi, rhubarb and ginger ketchup.

The Royal Exchange & The Exchequer
Best of Hampshire sharing board featuring a selection of Hampshire meats and produce including Alf Turner’s award-winning Hair of the Hog sausages, homemade black pudding Scotch egg and charcuterie from Ambrose Sausages.

  No.5 Bridge Street
  Blackmoor pigeon and black pudding sausage roll, gooseberry ketchup, kohlrabi and  Hampshire wasabi remoulade.
  Local, gamey pigeon and rich black pudding wrapped in flaky, buttery puff pastry. Balanced  by a sweet and sour ketchup   and a creamy remoulade with an added punch from locally produced wasabi.

Old Winchester twice baked cheese soufflé with Hampshire watercress salad.
This delicious light summer lunch puts the spotlight on Hampshire ingredients: Old Winchester gives the soufflé a depth of cheesy flavour balanced by the fresh pepperiness of Alresford watercress.

  Chilled nettle and almond soup, peas, broad beans and parmesan.

 Baked Tunworth cheese to share.

 Beef fillet, braised featherblade with watercress, parsley oil, charred onion, stout jus.
 Head Chef Matt Noonan slow braises a Hampshire cut of prime beef blade coupled with stout and onion to make every  mouthful memorable. Served with watercress from Alresford adding freshness and a peppery bite that compliments the  beef perfectly.

 Long Barn
 Chocolate and lavender cake.
 Long Barn’s café at their home and garden store near Alresford offers a range of delicious lunches, breakfasts and superb  cakes. Their best-selling ‘Chocolate and Lavender Cake’ is a must for this summer. A rich chocolate cake with a lavender i  infused chocolate ganache made by their cake baker Suzie. Available by the slice in the café or as a loaf cake to take  home.

 A Pinch of Salt cured meat board.
 The dish (coppa, lomo, bresaola, salami, chorizo and Parma ham) is garnished with our home grown salad leaves and  flowers from our walled kitchen garden. It truly is a farm or plot to plate dish.

 Ice Cream flavours of Hampshire Fare.
 Throughout July we will create limited edition ice creams, frozen yoghurt and sorbetto focusing on a selection of  Hampshire Fare producers. From Gorilla Silverback Gin to Little Bee Battenberg Cake, Wessex Wild Plum Liqueur to  Winchester Coffee and Naked Jam and more...our cabinet will be a showcase of Hampshire flavour.
