The Four Seasons Hotel near Odiham is opening their doors to FiSH. This is when Seasons Restaurant will be transformed into an exciting fish restaurant, offering a mouth-watering menu of the freshest fish including fish caught off the Hampshire coast by Lymington fishermen.
Executive Chef Cyrille Pannier's creativity is reflected in the appetising a la carte menu which features the freshest and most seasonal dishes - carefully sourced, freshly cooked and ready to be enjoyed! The Four Season Hotel is a member of county food group Hampshire Fare.
Adding a personal twist to the menu, 'Your FiSH Your Way' invites guests to create their own favourite choice; simply select your fish, whether you would like it steamed, pan-seared or grilled; select your accompanying sauce and favourite side dishes and your perfect fish dish will be served.
Whether it is Teriyaki Glazed Cod, Baked Loch Duart Salmon 'en papillotte' or home-style Lymington Fisherman's Pie, there will be something to float everyone's boat! For the fish pie, the fish included will depend on the 'day boats' catch but will very often include locally caught haddock, gurnard, plaice, cod or bass. Cyrille is fanatical about using local produce - he told us:
'Whilst we will also be using our own estate grown produce where possible, winter vegetables: Leeks, carrots, beets, cabbages are mostly coming from Norton Farm in Hampshire. All cultivated mushrooms from Fundamentally Fungus in Stockbridge. There will also be some other non-fish choices on the menu which will include Laverstoke Park farm beef and Hyden farm Beef, Poultry and eggs (if not from our own chickens!).'
FisH will open every Friday night in Seasons Restaurant in the Four Seasons Hotel, Dogmersfield near Odiham.
