Watercress Power Balls Recipe

Makes 6 portions


40g watercress
15g pumpkin seeds
40g Medjool dates
25g whole hazelnuts
10g puffed brown rice
Pinch of ground turmeric
Pinch of cinnamon
Pinch of Himalayan pink salt
1 tsp cacao powder
1 tsp vanilla extract
1 tsp Manuka honey
5g chia seeds
Juice of 1/2 orange

1. Pick the watercresss leaves off the stalks and finely chop
2. Place the pumpkin seeds, puffed rice, almonds and dates in a food processor and blend until finely chopped.
3. Add half of the chopped watercress, turmeric, cinnamon, cacao powder and pink salt and blend again until finely ground.
4. Add the vanilla, honey and half the orange juice. Blend for another minute, adding more orange juice of needed to bind.
5. Divide into 12 balls and roll in the rest of the chopped watercress to coat.
6. The balls can be kept for 3-5 days in an airtight container.
