The New Forest is set to welcome an exciting new destination restaurant this autumn with the opening of Kasi at Careys Manor Hotel & SenSpa in Brockenhurst. The contemporary Indian restaurant is from renowned chef and TV personality, Surjan Singh, fondly known as Chef Jolly, and will be his first outside London.

Inspired by Varanasi, one of the world’s oldest living cities, Kasi draws from the cultures and cuisines found along the Ganges, from the Himalayas to the Bay of Bengal. Created by Chef Jolly, the menu invites diners to explore India through its food, showcasing the warmth and generosity of Indian hospitality, while making the most of the finest local and seasonal ingredients found right on the doorstep in Hampshire.

Bold spices, open-fire cooking and historic techniques bring the flavours from each region to life, while tableside theatre adds a sense of celebration to the experience. Guests are invited to settle into the all-new restaurant, stylishly refurbished with earthy tones, rich textures, gold detailing and statement lighting, to evoke the warmth and vibrancy of India, right in the heart of the New Forest.

Alongside the à la carte menu, Kasi will offer a set thali lunch as well as three- and five-course tasting menus with optional wine and cocktail pairings. Signature dishes will include Hampshire lamb parantha; banana-leaf-roasted Rivers Test & Itchen trout with coriander-garlic curry leaf butter; roasted Wessex saddleback pork belly with buttered pao buns; and paneer lotus kofta with sundried mint and fennel. Traditional tandoori dishes, biryanis, lentils and breads round out the menu, inviting diners to discover familiar favourites with Chef Jolly’s modern twist.

Kasi follows on the success of The Great Indian in Finsbury Park and other dining projects across the globe including Singapore, Kolkata, Doha, Maldives and luxury Cunard cruise liner The Queen Anne. It joins modern British restaurant, Cambium, and Thai restaurant, Zen Garden, as one of three restaurants at Careys Manor Hotel & SenSpa, open to hotel guests and non-residents for lunch and dinner.

Chef Jolly comments: ‘The food at Kasi will tell the story of the Ganges through the ingredients, flavours and cooking traditions found along its banks. At the same time, it will be firmly connected to its home in the New Forest, making the most of the exceptional produce available locally and across the British Isles.

Careys Manor shares my belief that memorable restaurants are built around warmth, generosity and a real sense of place. I am excited to bring those ideas together at Kasi and to create a restaurant that feels equally welcoming to hotel guests, locals and those travelling to the New Forest especially to eat with us.
