Iconic Hampshire fare from our world-famous chalk stream rivers

As a leading foodie destination in the British Isles, Hampshire has the most amazing larder on our doorstep. That larder proudly boasts three chalk streams which are world-famous for the trout they nurture. In fact 85% of all the chalk streams across the world are in the county.

It’s a quintessentially Hampshire fare that’s perfect for Christmas feasts and gifts for foodies.

The chalk streams of The Itchen, Test and Meon benefit from a natural filtration system in which Hampshire trout thrive.

The porous chalk of the downlands acts as a filter bed for rainwater, so the rivers are alkaline with abundant minerals which enrich the water, creating unique crystal clear streams where wildlife flourishes.

It’s from these rivers that two of our members take their fish and create the most delicious, clean-tasting and nutritious chalk stream trout products. ChalkStream Trout and Butler Country Estates both offer the most exceptional, delicate, clean-tasting trout and an array of prepared trout products that make Christmas gifting and entertaining a delicious doddle.

Butler Country Estates

Richard Butler, founder of Butler Estates, is a passionate fly fisherman and a lover of fine foods. He offered some of his homemade, freshly-caught smoked trout pate to friends who had invited him to dinner. The pate was a massive hit and the partygoers asked for their own. The rest, as they say, is history, and Butler Country Estates was born.

Their Winchester smokery sits just a few minutes from the Rivers Test, Itchen and Meon ensuring their rainbow trout is prepared for smoking within 24 hours of being caught. The Troutlet is the shop at the smokery.

The Butler Estate process brings together the very best traditions of the Edwardian era, with the contemporary knowledge to create delicious produce. Their smoked trout pate is rich, indulgent and creamy – in six classics including watercress, dill, chives and chilli, as well as a new dairy-free option.

You can buy Butler products at the Troutlet, online and at local Farmers Markets including a click and collect option.

Their website includes a blog on why Hampshire’s chalk streams are so special.
