Cooking samphire

From the Fabulous Catch Company

We often see samphire, the delicious, salty, crispy cactus-like plant on restaurant menus, but apparently it's super-simple to cook at home.

 

 

 

Ingredients

  • Samphire
  • Unsalted butter
  • Optional but delicious – some fishcakes or vegan seacakes from the Fabulous Fish Company

Method

Samphire is widely available nowaways and is easy and quick to cook. Use it sparingly as it’s very salty. It beautifully elevates The Fabukous Catch Company Wightcakes, Crabbie Cakes and Vegan Seacakes.

Always wash it thoroughly and remove any woody stalks.

Simply steam over a pan of boiling water for a couple of minutes and then add unsalted butter, or a plant-based alternative, and freshly ground black pepper.

In 2012 Hayley Elston decided to put a passion for sustainability and supporting the declining local fishing industry into action. The Catch brand was born!

She started her ‘sustainable revolution’ on the Isle of Wight, making the now legendary ‘Festival Fish Finger Sandwich’ for Camp Bestival. The Fabulous Fishy Fingers were made entirely from the catch of the Yarmouth Fishermen’s Association (now the Needles Fishermen’s Co-op, a bona fide co-operative)..

Such was the success of The Fabulous Fishy Finger that Catch began hand-making other unique fish delicacies for the retail and restaurant trade, including gourmet fishcakes, crabcakes and crab bisque, proudly supporting sustainable fishing.

Catch has been lucky to have the support of Herbert Berger, a long-standing chef with a Michelin star pedigree who has always had a hand in the creation of the range.

Austrian-born HB is a three-time Michelin star chef and has been actively involved in The Fabulous Catch Company since 2016.  A Catch investor, Herbert’s creative culinary genius has guided many of the Catch recipes, ensuring each product in the range tastes sublime.
