Ingredients

  • 2 packs of ramen noodles
  • 4 cups chicken or vegetable broth
  • 2 tablespoons Adjika chilli paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1-inch piece of ginger, grated
  • 1 cup sliced mushrooms (shiitake, button, or your choice)
  • 2 cups baby spinach leaves
  • 2 green onions, thinly sliced
  • Hard-boiled eggs, sliced (optional)
  • Sesame seeds, for garnish (optional)
  • Lime wedges, for serving (optional)

Method

  1. In a large pot, bring the chicken or vegetable broth to a simmer over medium heat.
  2. Add the Adjika chilli paste, soy sauce, sesame oil, and grated ginger to the pot, stirring to combine.
  3. Simmer for 5 minutes to infuse the flavours.
  4. Add sliced mushrooms to the pot and simmer for 3 to 4 minutes until the mushrooms are tender.
  5. Meanwhile, cook the ramen noodles according to the package instructions until al dente. Drain and set aside.
  6. To serve, divide the cooked ramen noodles among serving bowls and ladle the hot broth and mushrooms over the noodles, ensuring each bowl is generously filled.
  7. Add a handful of baby spinach leaves to each bowl, allowing the heat of the broth to wilt the spinach slightly.
  8. Garnish the ramen with sliced green onions, hard-boiled eggs (if using), sesame seeds, and a squeeze of lime juice.
