Mussels cooked in Blackmoor Orchards Cider
Mussels are in season now – and this is a recipe From Blackmoor Orchards. It’s utterly delicious and beautifully simple!
Ingredients
Serves 4
• 1 tablespoon butter
• 1 tablespoon olive oil
• 2 shallots, peeled and finely chopped
• 2 cloves garlic, finely chopped
• 1 teaspoon fresh thyme leaves
• 1 bottle Blackmoor Orchards Ridges Green cider
• 1 kg mussels, washed and debearded
• Salt and freshly ground black pepper, to taste
• Fresh parsley, chopped (for garnish)
• Freshly baked bread (to serve)
Method
Heat a large saucepan over medium heat.
Add butter and olive oil and heat until bubbling.
Add shallots, garlic, and thyme; cook for 2–3 minutes until fragrant and softened.
Increase heat to high, pour in the cider, and bring to a boil.
Add mussels, cover, and cook for about 3 minutes, shaking the pot occasionally until the mussels open.
Remove from heat. Season with salt and pepper, sprinkle with parsley.
Serve immediately with freshly baked bread.
