Denver steak comes from the chuck but behaves like a premium steak. Don’t overcook it—keep it pink and it’ll rival far more expensive cuts

Ingredients

(serves 2)
2 Denver steaks (about 2–3 cm thick)
Sea Salt (preferably flaky)
Freshly ground black pepper
1 tbsp neutral oil (rapeseed or vegetable)
2 tbsp butter
2 garlic cloves, crushed
2 sprigs fresh thyme or rosemary

Method

1. Bring to room temp.
Take steaks out of the fridge 30–45 mins before cooking. Pat dry (this helps get a proper crust).
2. Season
Season generously with salt and pepper just before cooking.
3. Sear
Heat a heavy pan (cast iron ideally) until very hot. Or throw it over coals on the barbecue.
4. Add oil, then the steaks.
Sear for 2–3 minutes per side without moving them. You’re looking for a deep, golden crust.
5. Baste
Add butter, garlic, and herbs. Tilt the pan and spoon the melted butter over the steaks for another 1–2 minutes.
6. Rest
Remove and rest for 5–10 minutes before slicing.
7. Doneness Guide
Rare: 50°C
Medium-rare: 55°C (ideal for Denver)
Medium: 60°C
Well done don’t bother go to Mc Donald’s
Serving ideas
Slice against the grain for maximum tenderness

2 tbsp soy sauce
1 tbsp olive oil
2 garlic cloves
1 tsp smoked paprika
1 tsp honey
Marinate for 2–4 hours, then cook as above or on a BBQ.
