Summer in a Glass

THE PIG

This Summer, THE PIG are pouring a new favourite that’s already earning its keep.

A mix of Sapling Raspberry & Hibiscus vodka, Chambord, apricot syrup, and fresh lemon juice, shaken up into something bright, a little bit cheeky and very easy to go back to.

It’s all soft raspberry and floral notes to start, a gentle sweetness from the apricot, then a sharp citrus kick that keeps things nicely in check. The sort of drink you order once… then immediately again.

Ingredients

  • 25ml Sapling Raspberry & Hibiscus vodka
  • 25ml Chambord
  • 25ml Apricot Syrup
  • 25ml lemon juice
  • As much fresh mint as you can find
  • A top up of soda water

Method

  1. Start by chucking everything into a shaker, mint included, and give it a proper shake to wake it all up.
  2. Strain out over plenty of ice in a tall glass, then top gently with soda so it settles into that lovely, layered look (a bit of quiet showmanship never hurts).
  3. Finish with a fresh mint sprig on top, a little hint of what’s to come, and you’re good to go.
