Carrot & Date Loaf Cake

Ingredients
150g dates pitted & chopped
150ml olive oil
150g soft brown sugar
2 eggs
1 tsp vanilla extract
1 tsp cinnamon or mixed spice
2 carrots grated
200g self-raising flour
1 tsp baking powder
Method
- Add dry ingredients, including carrots and dates to the mixing bowl
- Add the oil, vanilla and eggs to a jug and whisk
- Mix the wet ingredients with the dry to make a batter
- Tip into a lined loaf tin and bake at 175 degrees for 40 minutes
- Allow to cool in tin
