The festivities are drawing to a close and we’re all looking forward to some healthy comfort food to see us through the cold, dark days of January and February. This recipe from the amazing team at MUNCH – a healthy, budget friendly recipe from Winchester-based MUNCH, an amazing not-for-profit organisation.

The team there offers personalised events catering across Hampshire, Wiltshire and The New Forest, for private parties, corporate events or business lunch. They then use the profit from these to help fund their work on food education in communities.

They run a structured programme of cooking demonstrations along with personalised nutrition consultation, one to one cooking classes and community cooking workshops.

They believe everyone should have access to good healthy food and feel empowered to live happier, healthier lives.

Ingredients

1 onion

4 cloves of garlic

1 red pepper

1 sweet potato

1 tin black beans

2 handfuls split red lentils

1 tsp cumin

1 tsp smoked paprika

1 tsp lazy chilli

1 dstsp cooking oil

Method

  1. First, peel and dice the onion. Peel and grate the garlic.
  2. Deseed the pepper and thinly slice. Next, peel the sweet potato and dice.
  3. Now, heat the oil in a medium-sized frying pan, on a medium heat.
  4. Then place the garlic, onion, peppers and sweet potato into the pan, mix well so the veggies are coated in oil.
  5. Then add the cumin, paprika, chilli and salt, mix well and cook for two minutes.
  6. Add a splash of water, mix well and cook for a further two minutes.
  7. Then add the whole tin of black beans and two handfuls of red lentils.
  8. Cook until the lentils and sweet potato are soft, adding more water through the cooking process if necessary
  9. Serve with a white and brown rice mix, pitta or cous cous.
